Crespelle con i Fiche (Crepes with Figs)

INGREDIENTS
  • 12 fresh California figs
  • 2 tablespoons dark rum
  • 1/3 cup confectioners' sugar
  • 1 cup heavy cream
  • 6 premade crepes
PROCEDURE

Rinse the figs and dry well. Cut each fig into 4 pieces. Place the figs in a skillet and sprinkle them with the rum and 2 tablespoons of confectioners sugar. Cover and cook over low hear for 10 minutes. Remove from heat. Whip the cream.

Heat the crepes in a pan over low heat, spreading some of the fig mixture over each one. Roll them up loosely. Sprinkle with the remaining confectioners' sugar and serve with the whipped cream.
