California Figs Flambe

INGREDIENTS
  • 12 Fresh figs
  • 1/2 cup Sugar
  • 1/2 cup Water
  • 3 tablespoon Fine granulated sugar
  • 1/2 cup Brandy
  • Whipped cream (for topping)
PROCEDURE

Put 12 fresh figs in the top pan, or blazer, of a chafing dish with 1/2 cup each of sugar and water, boiled together for 5 minutes.

Put the pan over the heat until the figs and syrup are heated through. Sprinkle the figs with about 3 Tbs fine granulated sugar and pour over them 1/2 cup warmed brandy. Ignite the spirit and let the flame die.

Serve the figs topped with whipped cream.
