California Fresh Fig Salsa with Grilled Lamb Chops
INGREDIENTS
- 1 cup firm-ripe fresh California Figs, stemmed and diced
- 1 fresh green onion, sliced
- 1 medium tomato; peeled, seeded and coarsely chopped
- 1/2 cups peeled and diced ripe fresh mango
- 1 tablespoon(s) finely chopped fresh mint
- 1 clove garlic, minced
- 1 jalapeno pepper, seeded and minced
- 1 teaspoon(s) grated lime peel
- 1 tablespoon(s) fresh lime juice
- 1/2 tablespoons(s) balsamic vinegar
- salt and pepper, to taste
- 16 small lamb loin chops
PROCEDURE
Combine all ingredients for salsa and chill several hours to blend flavors. Broil or grill lamb chops.
Serve with salsa to spoon on.
Yields: 2 cups salsa
